Scotch Eggs

Experience the delectable harmony of Scotch Eggs – a symphony of seasoned sausage, soft-boiled eggs, and golden breadcrumbs. Paired with white or sparkling wine, the savory richness of the sausage complements the wine’s crispness, creating a perfect balance. Ingredients:

    • 6 large eggs
    • ‘1 pound (450g) ground pork sausage (you can use plain or seasoned sausage)
    • 1/2 cup all-purpose flour
    • 1 cup breadcrumbs
    • Salt and pepper, to taste
    • Oil for frying
    • At your option take an additional 1-2 beaten eggs for coating

Instructions

  1. Hard-Boil the Eggs:
    Boil the eggs until hard-boiled (about 10 minutes). Once cooked, place the eggs in ice water to cool them down quickly, then peel and set aside.
  2. Prepare the Sausage Mixture:
    In a bowl, season the ground pork sausage with salt and pepper. Mix well.
  3. Wrap the Eggs:
    Take a portion of the sausage mixture (enough to cover one egg) and flatten it in your hand. Place a peeled hard-boiled egg in the center and mold the sausage around the egg, ensuring it’s fully covered. Repeat for all the eggs.
  4. Coat the Scotch Eggs:
    Roll each sausage-covered egg in flour, then dip it in beaten egg (optional), and finally, roll it in breadcrumbs until evenly coated. Repeat for all the eggs.
  5. Fry or Bake:
    Heat oil in a deep fryer or a large, deep pan to 350°F (180°C). Carefully lower the Scotch Eggs into the hot oil and fry until golden brown, turning occasionally to ensure even cooking. Alternatively, you can bake them in a preheated oven at 375°F (190°C) for about 25-30 minutes or until golden brown.
  6. Optionally Cut in Half:
    Some people prefer to serve Scotch Eggs cut in half, allowing the yolk to be slightly runny. If you like this style, adjust the cooking time accordingly.
  7. Want to experiment further:                                                          Feel free to experiment with different types of sausage or add herbs and spices to the sausage mixture for extra flavor.
  8. Serve:
    Once cooked, remove the Scotch Eggs from the oil or oven and place them on a paper towel to absorb any excess oil. Allow them to cool slightly before serving.
  9. Enjoy:
    Serve the Scotch Eggs warm or at room temperature. They can be enjoyed on their own, with a side of mustard, or as part of a picnic or appetizer platter.
